This should be a give. Other apps, for example Trello from Atlassian does this. If a user is removed from a paid plan (e.g. the user no longer works for the company) the user's name is retained on past interactions for historical and record keeping purposes. Box does a great job at managing historical files versions so the "anonymous user" functionality just seems like an obvious miss.
